BRUNCH EGG BAKE 
3 c. shredded cheese
3 c. Mozzarella cheese
1 jar mushrooms, drained
1/3 c. sliced green onions
1/2 med. red bell pepper, chopped
1/4 c. butter, melted
8 oz. ham, cut into strips
1/2 c. flour
1 3/4 c. milk
2 tsp. snipped parsley
8 eggs, beaten

Mix cheeses together, place 1/2 mixture on bottom of 9 x 13 inch glass pan. Saute mushrooms, pepper and butter until tender. Arrange over cheese and add ham. Blend flour, milk, parsley and eggs. Pour over cheese mixture. Add remaining cheese on top. Bake 45 minutes to 1 hour until mixture is set at 350 degrees. May add bacon, etc.
