CASHEW CHILI 
3 tbsp. oil
1 med. onion, chopped
2-3 cloves garlic
2 c. kidney beans or 1 (15 oz.) can & liquid
2 (8 oz.) cans tomato sauce or
1 can tomato paste & 1 can water
2 c. corn
1 (16 oz.) can whole tomatoes & liquid
2-3 tsp. chili powder
1 tsp. cumin
1 tsp. oregano
1 bay leaf (discard before serving)
1/2 tsp. pepper
1 c. raisins
1 c. raw cashews

Saute onions and garlic in oil; add beans, tomato paste/sauce, tomatoes, corn and seasonings. Simmer 30 minutes. Add raisins and cashews. Simmer another 20 minutes. Serve topped with grated cheese and sour cream, etc...
