CHICKEN WITH CASHEWS AND SNOW
PEAS
 
1 1/2 lb. boneless chicken breast, cut in 1" cubes
Garlic powder to taste
1 tbsp. soy sauce
1 tbsp. dry sherry
2 tbsp. cornstarch
1 tsp. Hoisin sauce
1 tbsp. Puritan oil
40 snow peas, ends & strings removed
1/2 c. bamboo shoots, drained
1/2 c. hot chicken stock
1/2 tsp. salt
1/2 c. salted cashews
Rice

Marinate chicken 15 minutes in mixture of next 5 ingredients. Heat oil in uncovered wok at 375 degrees. Add chicken mixture. Stir-fry 3 minutes. Add snow peas and bamboo shoots. Stir-fry 30 seconds. Add stock and salt. Stir-fry until slightly thickened. Stir in cashews. Serve immediately over rice.
