MOM'S ALBONDIGAS SOUP | |
4 tbsp. oil 1 minced onion 1 clove minced garlic 3 qt. chicken broth 1/4 c. tomato sauce 2 lg. sliced carrots 1 lb. fresh peas 1/2 lb. string beans 2 diced potatoes 1 diced chayote squash Saute onion and garlic together. Add broth and tomato sauce, bring to a boil and add vegetables. Meatballs: 1/2 lb. ground beef 1/2 lb. ground pork 1 egg 1/4 c. chopped parsley 10 chopped mint leaves 3 tbsp. raw rice Mix ground pork and ground beef with egg, parsley, mint and rice. Form into small balls and drop into boiling soup. Cover tightly and let simmer for 1/2 hour. Delicious! |
