BROCCOLI SOUFFLE 
1/4 c. finely chopped onions
6 tbsp. Mazola or butter
2 tbsp. flour
1/2 c. water
8 oz. jar Cheez Whiz
2 pkg. frozen chopped broccoli, thawed and drained
3 eggs, beaten well
1/2 c. crushed Ritz crackers

Saute onions in butter. Add flour and water. Blend in Cheez Whiz, broccoli, lastly the eggs, beaten very well. Pour into casserole. Sprinkle crumbs on top plus liberal number of pats of butter. Bake at 350 degrees for 45 minutes. 8-10 servings.

As it is a souffle, it should not be made too far in advance. Double the recipe for an easy casserole for a crowd.
