ZUCCHINI & RICE SOUP 
1 lb. zucchini, chopped
1 med. onion, chopped
4 tbsp. oil
Salt & pepper to taste
Chopped parsley to taste
A few drops lemon juice
6 c. chicken broth
1/2 c. uncooked rice
1 egg

Saute zucchini and onions in oil. Add salt, pepper, parsley and lemon juice. Cover and cook until zucchini is tender. Add broth and bring to a boil.

In a separate pan, partially cook the rice and then rinse rice well before adding to the broth. Add rice to broth and cook until tender. When soup is done, mix 1 egg with a little broth and gradually add this to soup.

Variation: May add chicken meat or tiny meatballs made from your favorite meatball recipe. Roll raw meatball mixture into tiny balls and drop into soup to cook.
