CRACKED WHEAT BREAD | |
2 c. cracked wheat 2 c. boiling water 1 tbsp. quick rising dry yeast 1/2 c. warm water 1/2 c. honey 2 tbsp. butter 1 tbsp. salt 5 to 5 1/2 c. flour (sifted) Combine boiling water, cracked wheat, honey, butter and salt in large bowl. Cool to warm. Soften yeast in warm water. Combine both mixtures and begin stirring flour to make stiff dough (it will still be a little sticky). Empty onto floured surface and knead in remaining flour. Let rise 20 minutes. Cut into 2 pieces and roll dough into shape approximately 4 by 14 inches. Roll jelly roll style to shape long loaves. Place on cookie sheet OR roll out shorter loaves and place in bread loaf pans. Let rise in warm place 30 minutes. Slash with knife on top of loaves. Bake at 350 degrees for approximately 45 minutes. |
