BASIC PANCAKES 
1 1/2 c. sifted flour
2 1/2 tsp. baking powder
3/4 tsp. salt
1 egg, well beaten
1 1/4 c. milk
3 tbsp. shortening, melted or oil

Sift together flour, baking powder, and salt. Mix egg, milk, and shortening or oil. If you use 3/4 cup milk it will make thick pancakes, 1 1/4 cups milk will make them thin enough to roll.

Pour milk mixture into dry ingredients and stir only enough to moisten the ingredients. Do NOT beat or pancake will be tough. Bake on hot griddle, lightly greased if necessary. Turn pancakes only once.
