CUBED STEAK PARMIGIANA 
6 cubed beef steaks
3 tbsp. flour
1/4 tsp. pepper
1 egg
1/3 c. bread crumbs
1/3 c. grated Parmesan cheese
Mozzarella cheese, sliced
1/2 tsp. basil
3 tbsp. cooking oil
15 oz. can tomato sauce
1 tbsp. sugar
1 clove garlic, crushed
1/2 tsp. oregano
1/4 c. grated Parmesan cheese

Dredge steaks in flour, salt and pepper. Beat egg with 2 tablespoons water. Combine bread crumbs, Parmesan cheese and basil. Dip each steak in egg mixture and coat with crumbs. Add oil to 13 x 9 inch pan. Add breaded steaks and bake uncovered 25 to 30 minutes at 375 degrees. Pour off drippings.

Combine tomato sauce, sugar, garlic, oregano and pour over meat. Sprinkle with Parmesan cheese and bake 20 minutes more. Put slices of Mozzarella cheese on meat and return to oven for 3 to 5 minutes.
