TWICE BAKED POTATOES 
Uniform sized baking potatoes
Milk or 1/2 and 1/2
butter
American cheese, optional
Salt
Pepper
Paprika

B ake potatoes in 400 degree oven until tender, cut potato lengthwise. Remove potato from potato skin and set skins aside.

Whip potatoes with milk or cream, butter, salt and pepper (as mashed potatoes). Diced American cheese can be added to hot potato mixture and whipped in (approximately 1 slice per potato.) I find that an extra potato is needed to refill the potato skins needed. Then generously spoon whipped potatoes back into potato skins and dot with butter and sprinkle with paprika. Bake again at 350 degrees for approximately 20 minutes to 1/2 hour to a golden brown. Potatoes can be done in advance and browned the next day.
