DIRTY CARROT CAKE 
3 c. flour
2 c. granulated sugar
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 c. salad oil
2 c. carrots, unpeeled and grated
4 eggs
1 sm. can crushed pineapple
1 tsp. vanilla
1/2 c. nuts

Combine in a large bowl salad oil, carrots, eggs, pineapple and vanilla. Add the sifted dry ingredients. Stir well. Add chopped nuts, if desired. Bake in an angel food cake pan, ungreased, for about 1 hour, 15 minutes in a 350 degree oven.
