IRISH SODA BREAD | |
4 c. flour 3 tbsp. sugar 1 tbsp. baking powder 1 tsp. salt 3/4 tsp. baking soda 6 tbsp. butter 1 1/2 c. dark seedless raisins 1 tbsp. caraway seeds 2 eggs 1 1/2 c. buttermilk In a large bowl with a fork, mix flour and next 4 ingredients. Then mix in butter until the mixture looks like crumbs. Stir in raisin and caraway seeds. In a small bowl, beat the eggs and stir in the buttermilk. Stir into flour mixture. Turn dough onto well floured surface, knead about 10 strokes to mix thoroughly. Shape into a ball and place in a greased casserole dish. Bake 1 hour and 20 minutes at 350 degrees. Cool and serve with butter or peanut butter. |
