ZUCCHINI TOMATO CASSEROLE 
1 med. zucchini, sliced thin
2 lg. tomatoes, peeled & chopped
1 med. onion, sliced thin & separated
1/2 c. grated cheddar cheese
3 slices bacon, cooked & crumbled
Butter
Salt & pepper

In buttered casserole, layer tomatoes, onions and zucchini. Dot with butter, scatter cheese and crisp crumbled bacon over each layer. Salt and pepper lightly. Cover with buttered bread crumbs. Bake, covered in 350 degree oven for about an hour, uncover for the last 20 minutes. No extra moisture needed. Serves 3 to 4.
