APPALACHIAN STACK CAKE | |
4 c. flour 4 tsp. baking powder 1/2 tsp. baking soda 2/3 tsp. salt 1/2 c. butter (soft) 1 1/2 c. sugar 2 eggs, slightly beaten 1 c. buttermilk 2 tsp. vanilla Cream butter and sugar. Add eggs and beat together well. Sift together 3 3/4 cups flour (save remaining 1/4 cup), baking powder, soda, and salt. Add to creamed mixture alternately with buttermilk. Add vanilla. Mix all quickly to form soft dough (not batter). Divide into six parts. Use remaining flour to roll out each of the six parts so that it will fit onto round, greased and floured pan. There will be six pans of cake to bake at 450 degrees. Remove from oven when lightly browned and spread layers with this apple filling: 1 lb. dried tart apples 1 c. brown sugar 1/2 c. sugar 1 1/2 tsp. cinnamon 1/2 tsp. allspice 1/2 tsp. cloves Cook apples until tender (cover with water and simmer). Drain and mash. Add sugar and spices and spread between layers of cake. |
