TACO SALAD 
3 whole chicken breasts, boiled and shredded
3/4 c. olive oil
1/4 c. red wine vinegar
1 tsp. sugar
1 tbsp. tomato paste
Salt and pepper
2 garlic cloves, minced
1 med. red onion, chopped
1 tbsp. chili powder
1 head romaine and 1 head iceberg lettuce, chopped
1 pt. cherry tomatoes
1 c. shredded Mozzarella cheese
1 c. tostada chips, crumbled
1 (16 oz.) can kidney beans, drained

Combine first 9 ingredients and set aside for at least 15 minutes. Assemble lettuce and tomatoes in a large bowl. When ready to serve add chicken, beans, and chips. Toss. Garnish with cheese. A meal in itself.
