CHINESE FRIED RICE 
2 tbsp. oil
2 tbsp. chopped scallions
1 lb. raw med. shrimp ( cleaned)
1/2 lb. mushrooms, sliced
1 1/3 c. Minute Rice (long grain)
2 eggs (scrambled into sm. pieces)
1 c. ham strips
1 1/4 c. chicken broth
1 c. cooked peas
1 tsp. soy sauce

Heat oil in skillet. Add scallions, shrimp, mushrooms and long grain Minute Rice (right from the box). Saute until shrimp are pink. Remove from heat. Stir in eggs and ham. Bring remaining ingredients to a boil. Stir into rice mixture. Because you don't boil Minute Rice first, it can capture all those tantalizing flavors. Cover and let stand 5 minutes. Stir before serving. Serves about 4.
