SWEET POTATO BISCUITS 
1 rounded c. mashed sweet potatoes
1/2 cup sugar
1/2 tsp. vanilla
2 c. self rising flour
2/3 c. Crisco
1/2 c. buttermilk

Mix sweet potatoes, sugar and vanilla well. Sift flour into bowl; add potatoes and Crisco; gradually add the milk. Handle the dough as little as possible. Roll out on floured surface. Cut; place on ungreased baking sheet.

Bake at 400°F for about 20 minutes. They should be lightly browned.

Makes 25 biscuits with 2 - 1/2 inch cutter (about the size of a vienna sausage can). These can be eaten at any meal.
