DOUBLE CHOCOLATE BANANA LOAF | |
2 c. flour 1/4 c. unsweetened cocoa powder 1/2 c. granulated sugar 1/2 c. brown sugar, packed 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 3 extra-ripe med. bananas 1/2 c. melted butter 2 eggs, lightly beaten 1 tsp. vanilla 1 c. semi-sweet chocolate pieces 1 c. chopped almonds In mixing bowl, combine flour, cocoa, sugars, baking powder, soda and salt. Puree bananas in blender to measure 1 1/2 cups. Stir banana puree, butter, eggs, and vanilla into dry mixture. Mix until blended. Stir in chocolate and almonds. Pour batter into greased 9 x 5-inch loaf pan. Bake in 350 degree oven for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Remove from pan to rack. Cool before slicing. Serves 24. |
