CORN BEEF AND YELLOW RICE | |
2 1/2 c. long grain rice 2 1/2 c. water Dash salt 1/4 c. oil 1 can kernel corn 1 can gandules pigeon peas 1 can corned beef 3 pkg. sazon seasoning mix 1 onion 1 green pepper 1-2 tomatoes Dash pepper Dice up onion, green pepper and tomatoes; saute in medium-large heavy saucepan (tight cover needed). Add corned beef with salt, pepper and 2 packages sazon mix. While all this is sauteing, rinse rice and drain. Add pigeon peas and corn to pan, with water. Add other package of sazon mix and bring mixture to boiling. When mixture is boiling, add rice and stir. Let water boil out of mixture and stir good. Lower heat to simmering, cover tightly and cook for 15 minutes. After 15 minutes, stir rice and cover and cook 15 minutes more. Rice is then ready to eat. |
