FRUIT MUFFIN 
2 eggs, beaten
1/2 c. cooking oil
1 c. milk
3 c. flour
1 c. sugar
4 tsp. baking powder
1 c. fruit (any variety: blueberries, apples, banana, peach, raspberries)

Preheat oven to 350°F. Beat eggs, oil and milk together. Add flour, sugar and baking powder. Fold in your favorite fruit. Pour into greased muffin tins.

Bake 15 to 20 minutes.
