EGG AND CHEESE BAKE 
5 slices white sandwich bread, butter on side
3/4 pound Longhorn Cheddar cheese, grated
4 eggs, slightly beaten
2 c. milk
1/2 tsp. salt
1/2 tsp. dry mustard

Cut buttered bread into 1 inch cubes and place in 9 x 9 inch glass baking dish buttered well. Sprinkle bread with cheese. Beat eggs, milk, salt and dry mustard. Add bits of cooked ham or drained diced bacon bits. Pour mixture over bread, refrigerate overnight.

Bake covered in 325 degree oven for 1 hour (last 15 minutes, uncover to brown). Make 1 and 1/2 recipes for 13 x 9 x 2 inch dish and allow 15 minutes extra baking time or until firm.
