SCALLOPED CORN 
25 saltine crackers, crushed
2 egg whites, whipped
1 c. skim milk
2-3 c. fresh whole kernel corn (or 2 cans drained corn)
1 small onion, chopped
Dash or two of pepper sauce (Tabasco or Texas Pete)
Pepper and garlic to taste
1/2 to 1 c. saltine crackers, crushed

Preheat oven to 350°F.

Mix first 7 ingredients. Pour into 1 qt. casserole dish.

Bake in preheated oven for 45-60 minutes or until set. Top with additional crumbs the last 20 minutes of cooking.
