BREAKFAST TACOS 
1 c. hash brown potato mix with onions
2 c. hot water
3/4 tsp. salt
8 flour tortillas
6 eggs, well beaten
1/2 lb. pork sausage, cooked & drained
1/2 tsp. salt
Freshly ground pepper to taste
2 tbsp. butter
Picante sauce

Combine potatoes, water and 3/4 teaspoon salt; mix well. Let stand 15 minutes, uncovered. Drain. Heat tortillas, wrapped in foil, in 350 degree oven for 10 minutes.

Combine potatoes, eggs, sausage, 1/2 teaspoon salt and pepper; mix well. Melt butter in large skillet. Add egg mixture to skillet; cook over low heat, stirring gently, until eggs are done. Spoon egg mixture into tortillas, fold in half. Spoon picante sauce over tortillas. Serves 8.
