ZUCCHINI, CARROT AND ONION
QUICHE
 
5 to 6 eggs
1 3/4 cups milk
1 tsp. salt
dash of cayenne or red pepper
1 lb. Swiss or Colby cheese
2 or 3 tbsp. all-purpose flour
1/4 cup chopped zucchini
1/4 cup shredded carrots
1/4 cup chopped onion
1/4 cup chopped broccoli (optional)
2 pie shells (unbaked)

Mix well eggs, milk and seasonings. Toss cheese with flour; add to milk mixture. Mix; add vegetables. Mix and pour in pans. Bake at 350°F for 45 to 50 minutes.

Makes 2 pies.
