1 lg. onion, chopped
2 tbsp. parve butter or sweet butter
1 lb. cooked carrots
1 lb. cooked sweet potatoes
1 tbsp. grated orange rind
2 tbsp. honey

Saute the onion in the butter. Mash the carrots and potatoes. Stir in onions, rind and honey. Beat until fluffy. Pile into well greased ring mold and bake about 20 minutes at 375 degrees. This recipe serves 6.
