M.'S APPLE-NUT CAKE 
2 c. sugar
1 1/4 c. oil (Mazola or other cooking oil)
1/4 c. water
3 eggs
1 tsp. salt
3 c. plain flour
1 tsp. baking soda
1 tsp. vanilla
3 c. chopped apples
1 c. chopped pecans

Blend sugar, oil and water in large mixing bowl. Add eggs, one at a time, blend as added. In another bowl, mix flour, salt, soda, and add gradually to above mixture. Blend at low speed 30 seconds.

Add vanilla, chopped apples, chopped nuts. Blend well at medium speed. Pour into greased and floured tube cake pan and bake at 350 degrees for approximately 1 hour and 15 minutes. Cool a few minutes before removing from pan.
