NUT APPLE CAKE 
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 c. oil (Crisco, etc.)
2 c. sugar
3 eggs
2 tsp. vanilla
2 c. finely chopped apples (McIntosh best)
1 c. chopped nuts

Grease and flour 2 loaf tins. Thoroughly sift together flour, baking soda, salt, cinnamon and nutmeg.

In large bowl of electric mixer, beat at medium speed oil, sugar, eggs and vanilla until combined. Gradually add flour mixture until smooth. Stir in nuts and apples.

Turn into prepared pans. Bake at 350 degrees until cake tester comes out clean. It takes about 1 1/4 hours. Test after 1 hour.
