ZIPPY CARROTS 
6 to 8 carrots, cooked
1/4 c. water or liquid from carrots
2 tbsp. grated onion
2 tbsp. horseradish
1/2 c. mayonnaise
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. fine bread or cracker crumbs
1 tbsp. butter
Dash of paprika

Cut carrots lengthwise in strips and put in shall baking dish. Mix water, onion, horseradish, mayonnaise, salt, pepper and pour over carrots. Top with a mixture of crumbs, butter and paprika. Bake in quick oven, 375 degrees, for 15 to 20 minutes. Garnish with parsley. Makes 6 servings.
