MASHED POTATO SALAD 
8 med. potatoes, peeled, cooked and mashed
1 sm. onion, chopped fine
2 tbsp. sweet pickle cubes
2 hard-boiled eggs, chopped
2 heaping tbsp. mayonnaise
1 tsp. mustard (optional)
1 squeeze of lemon juice
Salt and pepper to taste

Mix all ingredients together well. Refrigerate. Serve hot or cold.
