TOMATO - BASIL BARLEY PILAF | |
1 tbsp. olive or vegetable oil 1 clove garlic, minced 1 tbsp. snipped fresh basil or parsley (or 1 tsp. dried) 1/8 tsp. pepper 1/2 tsp. salt (opt.) 3 c. Quick or Med. Quaker Barley 1 lg. tomato, chopped 1/3 c. sliced green onion or 1/2 c. chopped green bell pepper 1. Cook barley according to directions on the package. 2. In a large saucepan, saute garlic in oil over medium heat about 30 seconds. 3. Add basil, salt and pepper, mixing well. Stir in barley, tomato, and green onion; mix well. Cook about 3 minutes or until heated through. 4. Serve immediately or cover and chill thoroughly. Nutrients per serving: 135 calories; 4 g. protein; 24 g. carbohydrates; 3 g. fat; 4 g. dietary fiber; 0 mg. cholesterol; 5 mg. sodium. |
