HOPPIN JOHN JAMBALAYA 
2 tbsp. oil
2 lg. onions, chopped
3 garlic cloves, chopped
1 lg. green bell peppers, chopped
1/2 c. chopped parsley
3 c. regular rice
2 lbs. Kielbasa sausage
1 lb. salt pork (optional) Good Seasoning
1 lb. dry black eyed peas, 1/2 cooked
6 c. chicken broth (canned)
1 bunch fresh scallions (included tender green tips)

Saute regular onions, bell pepper, parsley and garlic for 10 minutes. Add sausage, salt pork, peas, broth and bring to a boil. Add rice, return to a boil, add salt and pepper to taste. Cover and simmer 45 minutes. Add scallions, stir and let stand 5 to 10 minutes before serving. Hints: Hot corn bread and a tossed salad is a great addition.
