JAMBALAYA 
1 lb. liver sausage
1 - 1 1/2 c. uncooked rice
3 1/2 c. broth
1 fryer, boiled & boned, save broth to cook rice
1 bunch green onions, chopped
2 tbsp. corn or vegetable oil
1/2 tsp. each minced garlic, paprika, chili powder
1 or 2 tbsp. Worcestershire sauce
Tabasco sauce, salt & pepper to taste
1 bell pepper, chopped

Cut sausage into small slices and fry briefly. Put oil in Dutch oven. Add onions and bell peppers. Cook until tender, add rice and broth to Dutch oven. Cover, cook until half done. Lift lid, add other seasonings. Stir. Add chopped chicken and sausage. Add more broth, if needed. Cover and cook until rice is done on low heat.
