JAMBALAYA 
1 c. chopped onions
1/2 lg. bell pepper, chopped
1/2 c. chopped celery
1 tsp. minced garlic
1/3 c. butter
1 lb. shrimp, sausage, or chicken, cooked and deboned
1 lb. canned tomatoes
1 c. chicken broth
1/2 tsp. salt
1/4 tsp. cayenne pepper
1 c. raw rice
1/2 tsp. file

In large pan, saute onion, pepper, celery, and garlic in butter until tender, but not browned. Add meat and cook until done. Add tomatoes, broth, salt, cayenne, raw rice and file. Stir and cover. Cook 25-30 minutes or until rice is done.

You may try a combination of all three-shrimp, sausage and chicken in your jambalaya. Jimmy Dean regular flavor sausage is a good sausage.
