CHEWY KID'S COOKIES 
1 c. butter (250 ml)
1 1/2 c. white sugar (375 ml)
1 egg
1 tsp. vanilla or almond flavoring (5 ml)
2 c. flour (500 ml)
2 tsp. baking soda (10 ml)
1/2 tsp. salt (2 ml)
2 c. raisins (or currants for variety) (500 ml)
1 1/4 c. oatmeal (300 ml)

Cream together butter and sugar. Beat in egg and vanilla. Sift together flour, baking soda and salt. Combine dry ingredients with creamed mixture. Add raisins and oatmeal. Mixture will be very crumbly, but don't despair. Pat firmly in 1/4 inch (1 cm) layer onto two greased cookie sheets (there will be lots of room for the dough to expand).

Bake for 12 minutes at 350 degrees F (180 degrees C). Allow to cool for 2 minutes, then cut into strips with a sharp knife. Allow to cool before removing from cookie sheet.
