SWEET POTATO BON BONS | |
3 lbs. sweet potatoes, peeled & cooked 1/4 c. butter 1/2 c. brown sugar, packed 1 tsp. salt 1/2 tsp. grated orange rind 6 lg. marshmallows, halved 4 c. corn flakes, crushed 1/3 c. melted butter 12 pecan halves Mash sweet potatoes until light and fluffy. Beat in butter, sugar, salt and orange rind. Let cool. Divide into 12 portions. Press potato around each marshmallow half, being careful to keep marshmallow in center. Shape into ovals. Coat each with melted butter, roll in crushed corn flakes. Top with pecans. Place on lightly greased baking sheet. Bake in very hot oven, 450 degrees, for 7 or 8 minutes. Serves 6 to 8. These can be made the day before and baked just before serving. |
