CRAB CASSEROLE 
1 lb. potatoes
1 sm. onion, diced
1 3/4 c. milk
1/8 tsp. pepper
6 oz. American cheese
2 slices bread, toasted
1 tbsp. salad oil
1 tbsp. flour
1/4 tsp. salt
1 c. frozen peas
8 oz. crabmeat (fresh preferred)
2 tbsp. bread crumbs

Cook potatoes. While potatoes are cooking, heat salad oil and cook onion until tender. Stir in flour; cook 1 minute. Stir in milk, salt, pepper and peas; stir until thickened. Remove from heat; add cheese.

Preheat oven to 350. Peel potatoes and cut into chunks; add to mixture along with crabmeat. Cut toast into pieces and arrange in bottom of casserole dish, top with mixture. Top mixture with bread crumbs. Bake 15 minutes or until hot. Makes 4 servings.
