SWEET PICKLE RELISH 
4 qts. ground cucumbers (19 med.)
4 lg. onion
4 med. carrots
2 red & 2 green sweet peppers (red ones for color, use green also)

Grind and mix together. Mix in 2 tablespoons salt. Let stand for 2 hours, drain. Add: 1 tsp. black pepper 4 tsp. mustard seed 2 tsp. turmeric 4 c. vinegar 4 c. sugar

Cover and bring to hot boil. Boil for 20 to 30 minutes. Seal in hot jars. Makes about 9 pints.
