CHICKEN ENCHILADA CASSEROLE 
1 chicken, cooked and boned
1 sm. can evaporated milk
1 can cream of celery soup
1 can cream of chicken soup
1 can Rotel tomatoes
1 sm. onion, chopped
1 pkg. taco-flavored Doritos
1 lb. Cheddar cheese, grated

Cut up chicken; combine with all ingredients except cheese and Doritos. In a casserole dish, put a layer of Doritos, then a layer of chicken mixture, then a layer of cheese. Continue to layer in this manner until all ingredients have been used; end with a layer of cheese on top. Bake for 40 minutes at 350 degrees. Let stand for 20 minutes after removing from the oven before cutting.
