GLAZED FRESH APPLE COOKIES 
1 1/3 c. pkg. brown sugar
1/2 c. plus 1 tbsp. butter softened, divided
1 egg
2 c. all purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. salt
1/4 c. apple juice or apple cider
1 c. chopped walnuts
1 c. chopped unpeeled apples
1 c. raisins (optional)
1 1/2 c. sifted confectioner's sugar
2 tbsp. milk
1/4 tsp. vanilla

In large bowl, beat brown sugar and 1/2 cup butter with an electric mixer until well blended. Beat in egg until fluffy. In a medium mixing bowl, combine the flour, baking soda, cinnamon, cloves, nutmeg and 1/4 teaspoon salt. Add dry ingredients to brown sugar mixture; beat well. Beat in apple juice. Stir in walnuts, unpeeled apples and raisins. Drop dough from tablespoon onto a greased cookie sheet. Bake in preheated 375 degree oven for 12 to 15 minutes or until done. For glaze, in a small bowl combine confectioner's sugar, milk, the remaining 1 tablespoon butter, vanilla and remaining dash salt. Stir mixture until smooth, spread on warm cookies. Makes about 36 cookies.
