SKILLET ALMOND COFFEE CAKE 
3/4 c. butter
1 1/2 c. sugar
Pinch salt
1 1/2 c. flour
1 tsp. almond extract
2 eggs

Melt butter; mix with sugar. Add eggs one at a time. Add flour, salt and extract. Line 10-inch skillet with foil (don't tear off the edges). Pour batter into skillet. Sprinkle with sugar and chopped blanched almonds before you bake. Bake up to 40 minutes at 350 degrees. Leave in pan to cool.
