PINA COLADA FRUIT SALAD 
DRESSING:

1 c. plain yogurt
1 (2 oz.) jar crystallized ginger
1/2 (6 oz.) can frozen pineapple juice, thawed

FRUIT SALAD:

1 pineapple, cut in chunks
1 cantaloupe, cut in chunks
3 oranges, sectioned
3 kiwi, cut in slices
1 c. shredded coconut

DRESSING: Combine yogurt, ginger and juice in container of electric blender. Blend until smooth. Cover with plastic wrap and refrigerate until needed.

SALAD: Combine fruit, except coconut, in serving bowl. Cover tightly and keep chilled. Just before serving, stir dressing and pour over fruit. Sprinkle shredded coconut on top.
