BLUEFISH DIJON 
2 (8 oz.) bluefish fillets
2 oz. white wine
2 oz. lemon juice
4 oz. water
2 oz. sour cream
1 1/2 oz. Dijon mustard
6 slices tomato
4 strips cooked bacon
2 tbsp. melted butter
Paprika for garnish
Salt and pepper to taste (optional)

Preheat oven to 350 degrees. Combine white wine, lemon juice, and water; pour over fish in baking pan. Bake 10 minutes at 350 degrees. Remove from oven. Mix sour cream, and Dijon mustard. Pour on top of fish. Put sliced tomatoes on top of sour cream and mustard mix with cooked bacon on top. Sprinkle paprika for garnish. Finish fish in broiler for 1 minute.
