APPLE CRUMB CAKE 
CRUMBS:

1 1/2 sticks butter or Land O Lakes butter
1/2 c. sugar
2 c. sifted all-purpose flour
Pinch of salt

FILLING:

5 c. baking apples
3/4 tsp. nutmeg
1/2 c. sugar
2 tbsp. fine tapioca

Mix Crumb ingredients. Place 1/2 of mixture into spring-form pan. Place apple mix on top and bake for 25 minutes or until light golden brown. Add remaining crumbs and bake for another 25 minutes or until golden brown. Remove from oven; place on rack to cool. Sprinkle with powdered sugar, if desired. Serve warm or cold, with or without whipped or ice cream.

Variations: Instead of the above filling, use any of the Comstock or Lucky Leaf Pie fillings. I have used apples, cherry, blueberry, and peach. Pudding can also be used. When using pie fillings, I have baked the crust first and then added the fruit at the same time as the upper crumbs.
