CAPPELLETTI (FILLING) 
1 breast of chicken
1/2 lb. ground pork
1 (8 oz.) cream cheese
1/2 tsp. nutmeg
1 tsp. cinnamon
1/2 c. grating cheese
Juice and rind of 1 lemon
Salt and pepper
1 egg

Fry chicken and pork slightly and grind in a meat grinder. Add cream cheese, nutmeg, cinnamon, grating cheese, lemon juice and rind. Add salt and pepper to taste. Bind together by mixing in the raw egg. Make noodle dough. Roll it very thin. Cut into 2 x 2 inch squares (or smaller). Place about 1 teaspoonful of filling in each square. Fold into a triangle and twist together into a hat. Bring broth to a boil. Cook cappellettis in broth for about 5 minutes or until done. Cappelletti can be made, frozen, and cooked later. Cook a little longer if frozen.
