1 1/2 c. flour 3/4 tsp. baking powder 3/4 tsp. salt 1/2 tsp. baking soda 3/4 c. + 2 tbsp. butter, softened 3/4 c. brown sugar 1/3 c. sugar 3/4 tsp. vanilla extract 1 egg 3/4 c. toasted coconut 3/4 c. chopped macadamia nuts 10-12 oz. chocolate or milk chocolate chips Preheat oven to 375 degrees. In bowl, combine flour, baking powder, salt and baking soda; set aside. In bowl beat butter, brown sugar, sugar and vanilla until creamy. Add egg; mix well. Gradually add flour mixture. Stir in coconut, macadamia nuts and chips. Drop by teaspoonfuls onto ungreased cookie sheets. Bake 10 to 12 minutes. Allow to stand 2 minutes before removing from cookie sheets; cool completely. Makes about 2 dozen cookies. |
