RIPE OLIVE RICE 
1/4 lb. sausage meat
1 c. chopped onion
1/4 tsp. minced garlic
1 c. raw rice
1 (10 1/2 oz.) can chicken broth
1 c. diced seeded fresh tomato
1/2 c. canned or fresh mushrooms
1/8 tsp. pepper
1 c. canned sliced ripe olives
1/4 tsp. salt
1/4 tsp. oregano

(Optional - Use 1/2 pound or use HOT sausage).

Cook sausage until lightly browned. Add onion and garlic and continue to cook until onion is tender. Stir in raw rice, add rest of ingredients. Heat to boiling. Reduce heat, cover, and cook slowly for 20 minutes. Makes 4 to 6 servings.
