BARBECUE MEAT LOAF 
2 c. Stove Top chicken flavor flexible serving stuffing mix
1 c. frozen mixed vegetables, any variety, thawed
1/2 c. hot water
1 tbsp. butter, melted
1 lb. ground beef
2 eggs
1/2 c. barbecue sauce

Combine 1 cup of the stuffing mix, the vegetables, hot water and butter. Let stand 5 minutes. Combine remaining stuffing mix, ground beef, eggs and 1/3 cup of barbecue sauce; mix well. Spoon a third of the beef mixture into baking pan and shape into 8"x4" rectangle. Spoon vegetable mixture down center. Pat remaining beef mixture over filling and shape into a loaf. Brush with remaining barbecue sauce. Cook at 350 degrees for 45 minutes. Makes 4 servings.
