CRANBERRY ALMOND GRANOLA 
Super tummy! Hubby's homemade granola... THE BEST granola I have ever had... FAR better than store-bought!

3 cups rolled oats
1 cup slivered almonds
1 cup cashews, coarsely chopped or halved
1/4 cup plus 2 tbsp. brown sugar
1/4 cup plus 2 tbsp. honey
1/4 cup coconut oil (adds that special taste, don't sub with any other oil!)
ground cinnamon, to taste
3/4 tsp. salt
1 cup chopped dried cranberries (save for last)

Preheat over to 250°F (slow).

In large bowl, combine oats, nuts and brown sugar. In separate bowl, combine honey, coconut oil, cinnamon and salt. Combine both wet and dry mixtures and pour onto two sheet pans.

Bake at 250°F for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.

Remove from oven and transfer to a large bowl. Add cranberries and mix until evenly distributed. Allow granola to cool and store in an airtight container.

Enjoy in a bowl with milk or sprinkled over yogurt, or snack by the handful.
