LIZ'S EASY LASAGNA 
2 (24 oz. ea.) jars spaghetti sauce (I use Ragu traditional)
1 (9 oz.) box uncooked lasagna noodles (Barilla)
2 lb. ground beef
1 (12 oz.) tub cottage cheese
1 (8 oz.) block Mozzarella cheese
pepperoni slices, sliced mushrooms, sliced onion (optional)

Prepare the lasagna noodles and preheat oven according to box directions. While water is boiling, fry ground beef until done and drain. Slice Mozzarella cheese into squares (and if you opt to use onions, fry them with the ground beef).

After rinsing lasagna, in a 9x13-inch pan, layer noodles, then sauce, beef, (pepperoni or mushrooms if using them). Drop cottage cheese by spoonfuls about two inches from each other and lay squares of Mozzarella in the same way. Repeat layering until the last layer has cheese on top.

Cover with tin foil and bake at 350°F for 45 minutes. Remove foil and bake an additional 15 minutes.

Variation: If you have a vegetarian in the house like I do, replace all meat with fresh sliced mushrooms :)
