CHESTNUT PUREE 
1 lb. chestnuts
1/2 c. milk
1/4 tsp. salt
1/2 tsp. sugar
1/2 c. butter

Peel chestnuts, boil in water 30 minutes, or until tender, remove from fire and peel off second skin. Place chestnuts in saucepan with milk, mash with fork until smooth, add sugar, salt, butter and mix well over low fire. Serves 4.
